I'm looking for a recipie for mint sauce which is served in indian restaraunts.?

It's specifically the one which is served with onion bahjees - usually (although not allways) green in colour.

It cannot be bought anywhere!

You're after a sauce known as mint chutney (pudina chutney in India). I've listed a couple of recipes below, but you may have to try a few before you find one that suits you.
Reply:The dip/sauce is called a raita. Is great with all Indian dishes.



RAITA

250ml/8fl oz natural yoghurt

? cucumber, grated or finely chopped

large handful mint leaves, chopped

large pinch salt

?-1 green chilli, de-seeded and finely chopped (optional)



Mix togethor all the ingredients and serve chilled.

2/3 cup plain yogurt

1 cucumber, peeled and grated

2 tablespoons fresh mint, finely chopped

1/2 teaspoon roasted cumin seeds

1/4 teaspoon cayenne pepper

1 teaspoon salt

1/4 teaspoon black pepper



Put the yogurt in a bowl.

Beat lightly with a fork or whisk until smooth and creamy.

Add all the other ingredients and mix.

Cover and refrigerate until ready to eat.



Onion Bhajees

I could have these appetizers as a meal, if you want you can also add a finely chopped green chili to the batter. Gram flour is also known as besan and chickpea flour.

10-12 fritters 30 min 15 min prep



5 tablespoons gram flour

1/2 teaspoon turmeric

1/2 teaspoon ground cumin

1/2 teaspoon garam masala

1/4 teaspoon chili peppers

1 tablespoon very finely chopped fresh coriander

salt

1 large onion, thinly sliced and chopped

oil, for deep-frying



Mix the flour with the spices, add some water until the mixture is gluey.

Mix the onion into this paste, it should hold together, if necessary add more flour.

Heat the oil to medium heat and drop golf ball size blobs into the fat.

Cook for about 10 to 15 minutes until golden brown, drain on kitchen paper, serve warm with a yogurt- mint raita.
