Any one know how to make the mint sauce i get from the tandoori that goes on chicken tikka?

5oz tub natural yogurt

1 teaspoons of mint sauce

1/4 teaspoon of sugar

pinch salt

pinch chilli powder

Mix well, add a small amount of milk or water if its too thick.

Add to sliced onion, tomatoes and cucumber, lovely.

finely chopped fresh mint (not spearmint)

salt pepper

a pinch of sugar.



Mix well in a bowl. You will need a lot of mint and it won't taste exactly the same. Most takeaways buy it in bulk to save the hassle. For this reason they usually add large amounts of preservative which you can't (and probably don't want to!) replicate at home. You can also add a little garlic. Some supermarkets now sell jars of it. Brands like Pataks have a range of sauces and pickles.
Reply:That would be a Mint Yogurt Raita, here's a good recipe for it:



Yogurt Raita



250g plain yougurt

1 finely chopped onion

2 green chillies finely chopped

2 tbsp fresh mint finely chopped ( do NOT use mint sauce!!)

2 tbsp coriander leaves finely chopped

1 tsp roasted cumin powder



Beat the yogurt with a little milk (add dops of milk til you have the right consistency). Stir in all the other ingredients. You can add cucumber to it if you like too.

Combine

1/2 cup fresh mint leaves, finely chopped

1/2 cup plain yogurt

1 garlic clove, minced

1 teaspoon fresh lemon juice

salt and pepper to taste

Its actually plain yogurt, mixed with mint sauce. The proportions you need to mess with a little to get it right.



I also make it with mayonaise for salads - yummy!

fresh mint : 1 bunch

fresh parsely : 1 bunch

salt : 1/2 teaspoon

green chillies : 4 pcs

yoghart : 6 tablespoons



Method:



Mix everything together in blender.
Reply:put 3 teaspoons sugar

1 teaspoon vinegar1teaspoon salt in a pan and boil it get some mint leaves chop them finely put them in a bowl and pour the hot mixture of sugar salt and vinegar on top of the mint and leave to cool. happy cooking oh sorry i forgot to say you need 3 teaspoons of mint
