Where can you get a mint syrup?
This recipe if from Emeril's.com

Ingredients needed:

* 2 cups granulated sugar

* 1 cup water

* 1 cup packed fresh mint leaves

Place the sugar and the water in a small saucepan. Bring to a gentle boil over medium-low heat, stirring occasionally to help dissolve the sugar. While the syrup heats, rinse the mint leaves to eliminate any dirt. Once the sugar has dissolved, remove the syrup from the heat, and dump the mint leaves into the saucepan. Allow the syrup to cool for at least 1 hour before straining out the mint. Store the syrup in an airtight container and place in the refrigerator until ready to use. Syrup will keep, refrigerated, for several weeks.

Yield: about 2 cups

Minted Simple Syrup

1 cup granulated sugar

1 cup water

2 tablespoons light corn syrup

1 1/2 cups packed fresh mint leaves, chopped

1. In a saucepan bring sugar, water, corn syrup and mint to a boil, stirring until sugar is dissolved. Simmer syrup, undisturbed, 2 minutes. Pour syrup through a fine sieve, pressing on solids. Cool at room temperature.

2. Syrup keeps, covered, in the refrigerator for weeks.

Makes about 1 1/2 cups.

i've tried both and there actually is a small difference. it depends on the amount of mint you put. =)

Enjoy!
Reply:If you can buy regular corn syrup where you live, you can add mint extract or fresh mint leaves to it. If you can't buy regular corn syrup, just google a recipe for it. It's easy to make.
Reply:Make a stock syrup

400gr caster sugar

350ml cold water

Reduce for about 3 min until syrupy, once you get more confident you can reduce to your desired consistency.

Chop up your mint and add to syrup when nearly cold
