Any suggestions please on how to use fresh mint? the simpler the better?
Add to water in your ice trays - great in Pimms! Mint and most herbs will keep well in ice pretty indefinitely.

Ingredients
100g fresh mint leaves, finely chopped
1 tsp fructose
splash of boiling water
30ml red wine vinegar
1 red chilli, de-seeded and finely chopped
Method
1. Mix the chopped mint with the fructose. Add a splash of boiling water and stir until the fructose sugar dissolves.
2. Mix in the red wine vinegar and chilli and stir well.
3. Set aside to allow the flavours to infuse.
4. Serve with barbecued lamb.

Reply:Oh, I've always grown fresh mint, I love the scent.
I put a few sprigs in when boiling potatoes, it adds a bit of zest or you can use it to make mint sauce, chop up the leaves into tiny pieces and mix with a little bit of vineger, put on chops..... beautiful.

A mint and rum cocktail with lots of ice.
I N G R E D I E N T S
2 ounces simple syrup or 3 teaspoons sugar
1/2 lime
10 fresh mint leaves
1/2 cup fresh ice
splash of bitters (optional)
1 1/2 ounce Rum (Barcardi)
2 ounces club soda
1 sprig of mint for garnish
1 lime wedge for garnish
I N S T R U C T I O N S
Juice the 1/2 lime into a tall glass. Cut the remain lime into quarters and add them to the glass. Stir and blend the mint leaves with the lime and syrup (or sugar) crushing the leaves to extract their flavor. Add the crushed itce, rum, and club soda and stir well to blend. Garnish with the lime wedge and mint sprig.

chop the mint into small pieces not the stork and do the same with a onion and a piece of cucumber take the skin of the cucumber put into a dish add a pinch of sugar and some brown vinegar till the stuff is covered and leave for a short while and its good with fish and lamb and on new spuds or with a salad

-blend up with a little vinegar and spices for mint sauce to go with lamb dishes
-put in hot water and drink as tea
-dry and use as tea
-slice finely and add to olive oil and vinegar for salad dressing or on boiled broad beans (serve cold) for the Greek dish Koukia.
-put in a spring when boiling potatoes
-put in a sprig when boiling peas
-rub on your forehead if you feel tired or headachey

Reply:It is good to mix with hamburger. For one pound of ground beef add one small onion diced or use green onions. Add a handful each of chopped fresh parsley and chopped fresh mint. Can be added to a cucumber yogurt sauce. Seed and shred a cucumber, add plain yogurt a TBS. chopped mint and some garlic. Salt and pepper it to taste.
I also make a yummy salad. Coarsely cut up half a head of cabbage. Throw in fresh chopped mint, fresh parsley, and garlic. Mix a dressing of 3 TBS. olive oil, 3 TBS lemon juice, 1tsp, salt and 1 heaping tsp. dried oregano. Mix all and serve.
Reply:Dont panic! you dont have to use it all at once! mint actually freezes really well, just chop it up and put in a freezer bag, when you need some just add straight from the bag to your cooking, however much you like! also you can make mint tea, use it with lamb, new potatoes etc
